Barley Wine #4 -------------- Gordon L. Olson Ingredients for 5 gallons: 12 lb. Breiss 2-row pale malt 1 lb. Toasted pale malt 1 lb. Light Crystal, Ireks, 20 L 1 lb. Malted Wheat 10 oz. Belgian Caramunich, 70 L 8 oz. Amer. 6-row crystal, 41 L 1 oz. Chocolate Malt 4 lb. Alexander Pale Malt syrup 1 oz. Galena pellets, 13.8%, 90 min. 1 oz. Chinook pellets, 11.5%, 90 min. 1 oz. Nugget pellets, 12.8%, 90 min. 1 oz. Northern Brewer pellets, 7.5%, 60 min. 1 oz. Mt. Hood pellets, 3.9%, 15 min. 1 oz. Saaz pellets, 5.4%, 0 min. 1 oz. Saaz pellets, 5.4%, dry hop, 1 week 0.5 tsp. Irish moss, rehydrated, 20 min. 1 tsp. Polyclar, 15 min. CL-170 Classic British Ale yeast 0.5 c dextrose for priming Procedure: The grains were mashed in at 130 F for 20 minutes. Then one gallon of boiling water was added to raise the temperature to 150 F. The mash was held between 152 and 156 F for 90 minutes, then raised to 165 F for 10 minutes. Approximately six gallons of sweet liquor were collected. At that point the specific gravity of the run off was still 1.020, but it would dilute the wort too much, so the rest was drained down the sink. After 20 minutes of boiling, the wort was at SG = 1.090. This included the malt extract. After 90 minutes the wort was cooled with an immersion chiller and racked into a carboy. Air was bubbled through the wort for 30 minutes with an aquarium pump. The initial gravity was 1.097 and the final, four weeks later, was 1.037. The fermentation temperature was 65 F. Comments from AHA judges when six months old: Bouquet/Aroma - "Big nice esters, right on for style. Malt would have been nice to find - consider more malty profiles." "Not enough hops." Flavor - "Big fruity malt flavor, some sweet malt middle with middle of mild hops. Finish is quick and sweet. Could use slightly more hops in finish." "Sweet, malty, creamy taste. Not much bitterness comes through, but small amount there. Warming alcohol taste becomes the aftertaste." Drinkability & Overall Impression - "Very drinkable beer, very clean, sweet malt is dominant throughout beer. Hops well selected, blend throughout brew. Perhaps slightly more for finish." "On the malty/sweet side of the scale, but very drinkable." "Increase the hops a little & I'd want lots of this on a winter's night." The assigned score was 40 out of 50 points and was given first place at the June 1995 AHA National Homebrew Competition.
