This batch was brewed on 3/5/00. It was brewed at the same day as a batch of Moravian Pilsner brewed with all Czech ingredients. The results of both batches are great, but I don't believe I ever try mashing two seperate batches again on the same day.

Mashed for 90 minutes using 2.8 gallons of liquor at
175°F. Final temperature 152°F. Used a mortar mixer to mix the grains and
liquor allowing a very thick inital mash (about 2 gallons liquor), then
allowed mash to sit about 10 minutes, then added the balance of my liquor. I
believe this produces the equivalent of a protein rest, and helps with head
and body. pH = 5.0 |
