Lev's Czech Pilsner

This batch was brewed on 3/5/00. It was brewed at the same day as a batch of Moravian Pilsner brewed with all Czech ingredients. The results of both batches are great, but I don't believe I ever try mashing two seperate batches again on the same day.

I used well water as is with no treatement other than boiling.

Grain:

7 lb. German Pilsner
3 lb. German Munich
1 lb. British Light Carastan

Mash:

80% efficiency

Mashed for 90 minutes using 2.8 gallons of liquor at 175°F. Final temperature 152°F. Used a mortar mixer to mix the grains and liquor allowing a very thick inital mash (about 2 gallons liquor), then allowed mash to sit about 10 minutes, then added the balance of my liquor. I believe this produces the equivalent of a protein rest, and helps with head and body. pH = 5.0

Sparging took 25 minutes, using 5.5 gal 180°F liquor, final pH = 5.3

Boil:

90 minutes

SG 1.046

7.2 gallons

Hops:

1 oz. German Northern Brewer (9.7% AA, 60 min.)
1.5 oz. Czech Saaz (3.3% AA, 15 min.)
.5 oz. Czech Saaz (aroma)

Yeast:

Used Czech Pilsner Lager (Wyeast #2278). Activated 3/3/00 at 11 PM, started culture 3/4/00 at 10:30 AM, used 22 oz of hopped wort with a gravity of 1056, diluted to 1.5 liters. Pitched 1/2 of this culture at 8 PM 3/5/00.

Log:

Actual OG 1060. Primary fermentation at 55°F, transfered to secondary 3/11/00 (1023G, 6.2°P), fermented at 40°F, bottled 5/15/00, final gravity 1011G(3.0°P).
