Michael Kane’s Dry Stout:

This recipe took a silver medal in category at the 2009 NHC.  The ingredients listed are for a 12.5 gallon post-boil batch.

 

Grain Bill:

20.0 lb. Two-row malt

3.0 lb. Flaked oats

2.0 lb. Pilsner malt

1.5 lb. Roast Barley

1.5 lb. Victory malt

1.25 lb. Pale chocolate malt

1.0 lb. Chocolate malt

1.0 lb. Crystal 80

.75 lb. Crystal 40

 

 

Hop Schedule:

3.5 oz  Fuggle 6.0% A.A. 60 min.

2.0 oz  East Kent Goldings 4.5% A.A. 60 min.

.5 oz  Cascade 6.3% A.A. 60 min.

(about 59 IBU)

 

Mash grains at 154 for 60 minutes.

Original Gravity 1.072

Final Gravity 1.014

 

Ferment with White Labs WLP002 (English Ale) yeast at 68 degrees.

ABV: 5.6%
