i am fascinated with the use of dried milk but have only used it to make yogurt which i simply rehydrate according to directions (warm water) into at least a gallon, then i inoculate the milk with 1 T live culture yogurt (stolen from a store bought carton of yogurt...), place in pint jars and set them all into a Coleman ice chest along with a heating pad... just a plain old heating pad ... set on warm ... i let it set overnight and the next morning, it will have the jelled appearance (lightly touch and it springs back) that shows the culture has done its job. i take about a quart of the product and pour it into two thicknesses of well washed tshirt material (use a colander), (cant find cheese cloth here in Oklahoma... must be here but so far no joy.) this makes a finished bag of about six inches diamter, which i suspend over the sink.. i let it set for at least three hours or until it has completely quit dripping. the final result is a ball of no fat 'cream' cheese, i form it into
logs cover them with chutney, then a thick coating of the green onion tops from scallions, and lay it waste with little crackers.....(this is a fairly acid cheese, the sweetness of the chutney is a perfect foil for it)...the majority of the yogurt i eat by putting one inch of apple pie filling in an 8 0z coffee cup, take it to half an inch from the top with yogurt, stir, and sprinkle it with the little cinnamon butter crumbs used on dutch apple pie... live acidopho.. aciddolipho... little critters we need for our intestinal health that make vitamin d when we're in sunlight............, anyhow... another great dip is to mix a cup of the yo cheese (neufchattel) with 1 C salsa and bring on the doritos.... really great, quick far beyond foolproof cheese and the yogurt will convert anyone with the applepie filling and cinnamon butter crumbs.refrigerate of course :
these guys make dried milk that they sell in small quantities, & twenty five and fifty pound bags.. if you are ever in phoenix its great to drop in ... any weekday you can buy just bagged dried milk still warm from the drier.
