There are two visual characteristics for fungi. One is the fruiting
body which we know as mushrooms. The other is the mycelium which is the
actual permanent part of the fungus. With most mushrooms, it is a white
fibrous material that snakes around under the ground or inside wood or
other substrate.
In the case of P. roqueforti, the mycelium is the blue stuff that snakes
around inside the cheese and the fruiting bodies are the black stuff.
If you look at it with a hand lens you will see little black
dots(mushrooms).
Sooner or later, under the right conditions, "blue" cheese will produce
black fruiting bodies. This will not affect the cheese as they are
usually on the surface only. However, they have an unpleasant taste so
it should be removed. Just wiping is usually adequate.
