You need to review the basic process before you jump in.  You almost 
must add cream and must not use whole milk if you are talking about 
store milk.

There are lots of sources of info out there but I can only speak for my 
own which will give you the background needed to know how to get started.

Ponder my cheesemaking page and then the cheese milk page for 
alternative milks that can be used.
