I think the idea is that if you just go round and round, you creat a 
whirlpool which might not mix very effectively.  Stirring up and down is 
probably a poor choice of words.

If you use a ladle for stirring, just pull up a scoop from the bottom 
now and then while stirring and you will do a pretty effective job.

There is not much rennet in a whole kettle of milk so it is important to 
get it mixed well and quickly before it starts to set.
