Depending on the quantity of whey you produce:
1: Get a couple of RO filtration setups w. different pore sizes, use diafiltration to remove all the lactose, spray dry the remaining fluid and sell it as WPC ( Whey protein concentrate ) to the bodybuilding crowd as a dietary supplement.. Apparantly it increases the metabolism and helps your body burn fat..
Bonus info: Lactose can be used to "water down" various illegal substances - IOW: Sell it to your local drug dealer :-)..
Extra Bonus info: Whey proteins are often used in industrial meat processing - especially when "inflating" meat products with water - they help keep the water inside the ham..
2: pasteurise, adjust pH to 4.4 w. formic acid ( HCOOH ) and feed it to the pigs ( not talking about the police here :-)
3: Dump it in the sewer or in your compost.. The lactose is great sewageprocessing bacteria food..
4: Bake loads of bread and eat it with your cheese :-)

I've tried to do something productive with whey quite a few different times, and it always seems to be more trouble/work then any benefit I get out of it. The only thing I ever came up with is to use it in making bread--that works. But I don't do a lot of baking, so it usually just goes down the drain, Sorry I couldn't be more help.
