One negative effect could be the price.  I suspect dried buttermilk 
would be much more expensive than NF Dry Milk.

I can only speak for the price of the fresh, uncultured buttermilk and fresh skimmed milk from the farmer.. I believe we pay around 0.29 DKK ( around 4 US cents ) per litre of uncultured buttermilk, while we pay around 3 times as much for skimmed milk ..

Ofcourse those prices may well be different in small quantities..
