I haven't done this, but pictured it in my mind while reading your email..

take a round thin hoop, just the right size to fit inside your pot.  
(would one of those quilting hoops work?)  String the hoop with a 
checkerboard of the smallest guage of guitar strings, piano wire, etc.  
Rig some handles so you can push the hoop down into the curds.  rotate 
the hoop 1/4 turn at various depths to make the horizontal cuts.

The only problem I see with this is it would mash up the curds right 
along the edge where the hoop goes.
