I have been told by a good friend of mines (who is a nurse and medical 
student) that some people are also intolerant to the lactic acid.  Old 
cheeses should be fine, since my GF is lactose intolerant and enjoys 
(tolerates well) good real cheese.  Then, one day, my friend Julio, told 
me that some people are also intolerant to lactic acid.  Since i am not 
a medical student nor a nurse, i have to take his word on this.
