There really is little difference in the process but goat milk usually 
has less fat so hard cheeses do not generally work out as well. 
However, it is easy to correct this problem if you add extra cream to 
the milk.

This doesn't help much is you raise only goats and want to be self 
sufficient but life is not fair.
