<DIV><FONT face=Arial size=2>We have been getting as green mold on our swiss
cheeses in the cure cave . I am thinking the humidity is way too high it hovers
around 94-99 most of the time. WOuld a dehumidifyer work for this. I have been
scrubbing it off of the cheese, also we are getting some cheese ripening matts
for the cheeses to sit on as we are using a fiberglass shelf. Our health dept
does not allow wood surfaces.</FONT></DIV>
<DIV><FONT face=Arial size=2>ps , the cheese taste great , but looks pretty bad,
plus the labor of cleaning all of it is way too much.</FONT></DIV>
